Valid concern, but a random thought.
What about using some proximity-limited interface? If possible a direct physical contact? If it does not involve longer-than-few-cm distance, the attack scenarios are drastically reduced and get in the same category as knife attacks, just with more complex equipment.

A refinement of the idea. A reed switch that switches off the authorization. To override, place a magnet over the pump. You need a relatively strong magnet over a pretty short distance.
