The pink or orange colour is due to trace amounts of harmless haematite (iron oxide) which forms in the strongly oxidising conditions you expect in desiccating conditions required to lay down salt. It’s the same reason desert sandstones, like those of South Devon and Cheshire are ludicrously brightly coloured.
