My brother worked at a Subway in New Haven (probably one of the first), and he said they would grind up the old dried bread every week and use it to make the dough for the next day/week’s “fresh” bread. Anyone with baking experience know if this is feasible?

Pretty sure that isn’t a thing.

1. it wouldn’t really work.
2. All the dough is shipped into the stores pre-made and frozen, they just thaw and bake.
3. flour is sooooooo cheap that the labor of drying and grinding old bread would never be worth it.
