One begins to question the story that Isildur died in an ambush by orcs. He was killed by arrows, no? Which people in Middle Earth are known for favoring the bow?

No, they weren’t. That was Sauron, and before him, Morgoth.
First off, Morgoth was their creator. They were originally elves, themselves.
Second, if you read the Middle Earth books as a history that was written by the winners, it’s painfully obvious that the orcs were demonized in order to strengthen the elves position leading the coalition with dwarves and men. As The Hobbit showed, without a common enemy, the dwarves especially were ready to fight the elves rather than be dominated by them.
