I agree that the average user may not be aware of this, but every voice recognition system has to be fed data from human listeners. These manual transcriptions are what tell the computer what words match up with what sounds. Without human listeners and manual transcriptions, voice recognition isn’t possible.
It is possible though, to do it without human listeners dealing with customer data, just not at prices that make the companies happy. They could pay for the data set creation and human listeners up front rather than using their customer’s data. The privacy invasion isn’t a technical requirement, just a business desire.
