A museum curator would frown on handling 100 year old books without white gloves to protect the surfaces from the natural oils and salts within fingerprints.
It really depends. I know several important collections that say the exact opposite. It is really easy to tear and damage a book without the fine motor control of gloveless hands. Many collections hence insist on you washing your hands but forbid you to wear gloves.
Here for example you see two conservators from the British Library, as professional as they come, taken from the BL collections care Twitter account. No glove in sight.
