Bike maintenance is a little different to hydraulic maintenance unless you are also reboring and sleeving the engine cylinders and fitting the correct sized rings when you are talking about maintenance.
OTOH her technician should probably have the necessary tools, micrometers, micron calipers and suitable polishing equipment to maintain the hydraulics.
You may be surprised how little FDA regulation there is for medical devices. There’s a great doc on Netflix called The Bleeding Edge that goes into further details.

I’ve seen both lack of vigilance and hyper-vigilance by FDA, firsthand.
