It’s a relief that we don’t have those here in WA. Although I’d bet they taste a lot better than farm pork.

It’s also a ‘proof of concept’. If it failed to sell, 5 tons would be “a wasteful investment” or somesuch. I’m quite sure they can 10x that number in short order, and they won’t be the only game in town for long.
