After reading through it’s not so much the rotting or bioluminescence, but it seems to be a function of certain colors which convert UV to light (I’ll let experts explain that), but they can get 80% of those colors in dyes from food scraps (still no blue). Supposedly it’s something quantum dots do well, this is just much cheaper and easier to source.

Not sure. One item that leaps to mind in quinine. Like the stuff in tonic water. Another is vitamin B (ex: look at how bright your urine becomes after eating nutritional yeast.
