Funny, we used to harrow it out of the wheat fields prior to planting.

Our old place had a ton of purslane growing in the cracks in the pavement. It’s really tasty, especially when younger. Refreshingly juicy, but crisp, with a nutty taste. Great in salads.

Makes a nice pickle. Cooking it reduces oxalate, pickling also slightly does so. Oxalate content of raw and cooked purslane | Health & Environmental Research Online (HERO) | US EPA
