It’s a bad use of single-molecule pavement interface, outside the videogame context where you only have 20 polygons to give to contrivance. He should make a Trompe L’Oeil of the frame instead so that it appears conformed to something else; or a POV likeness of it so that he can make it appear to be made of elbows or tripplebutts or folded bike thieves or such.

Short answer: they don’t. they are there for show.
Longer answer: it’s all direct drive, so speed control is how fast you pedal, and slowing down is a function of pedaling slower. And since there is a ton of drag there, (tracked vehicles are not known as efficent things!) as @GilbertWham stated you come to a decently rapid halt.

Assuming you had it up to a high enough speed on a steep enough grade? you could pull your legs out of the way of the pedals, but then you have the problem of stopping at the bottom…

I was trying to get the Bing Image creator to draw the bike meme blocking the wheel spokes except with square wheels, and it seems to have an inherent difficulty with the concept “square wheel”.

Oh nice, a strandbeest bike! The mechanism is called Jansen’s linkage, named after the inventor Theo Jansen.
