He does do amazing things. He also has the tools to do them. As an ex-pastry chef it’s hard to see his stuff being seen as what to expect in fine dining because even those temples to gastronomy aren’t so equipped. Probably I’m just jealous.
Last year Netflix gave Chef Amaury a reality TV show, “School of Chocolate”, where he had a group of newer and experienced professional pastry chefs in a boot camp. He’d open each episode with a magnificent sculpture, then teach some technique that it was built upon; the students had to copy and practice the technique. Each chef was then given 8 hours to build a sculpture of their own, showcasing their use of that technique.
The manufactured drama was the typical food-show-contest fare. Some of the students clearly had the aptitude, skills, and abilities needed to climb to the next level; most did not. However, watching the chef’s lessons then watching the students practice and apply the art was absolutely fascinating. Worth watching if you’re into seeing a true artist at work.
