Man, that shift from that boring-ass aqua to the space stuff in Snow Leopard was rad! And not just the wallpaper, but the whole os started to look less cheesy and more classy. iirc, it was also around that time they dropped all of iOS skeuomorphic crap (no, it was a few years later).
I don’t mind the wallpapers since High Sierra. Catalina was especially nice, imo. But stock wallpapers only last a few minutes before they’re replaced with Barbara Cooney images. My latest is from Ox Cart Man (previously Ms Rumphius):
