Weird. I always called this method, “cooking a steak.” But I usually salt it first and let it hang out in the fridge for up to 8 hours uncovered. Only time I don’t salt is if the steak is frozen. And yes, it’s perfectly fine to fry a frozen steak without defrosting it first. You just can’t season it until after it’s cooked.
