Gardening, Part 2

I’m a little hesitant to use a copper based treatment due to the possible buildup in soil, particularly since we are on about 1 acre plots around here and everyone is on wells. Has anyone had luck with neem or other oil based treatments? (I didn’t know I was going to ask about that until researching copper based treatments…)

in my experience, neem oil won’t do shit for mildew.
YMMV, of course.

Pity there’s no aubergine, you could make caponata with peppers, but I imagine you’ve got a few recipes like that already which can be preserved.

Although we’ve also got shishito peppers right now, and eggplant, and that much again just in regular sized tomatoes!

Do you have a recipe you like? I’m not a huge fan of aubergine/eggplant unless it’s roasted, but as someone with a lot of both, I do need to branch out so as not to waste the produce.

I used a lot of peppers, one large zucchini, and tomatoes to make a Soup. Tomorrow is pickling day for all the pickling cucumber. For the larger peppers I can dice them then freeze them until its time to make salsa. The neighbors are getting a bunch too

If you’re making sweet pickles, use some of the hot peppers to get sweet hot pickles. I’ll be pickling some chopped up hot peppers soon with just plain vinegar.

The nice thing about caponata is the veg calls for frying, but you can definitely bake or roast them instead (we do for our parmigiana alla melenzana, and it’s just as nice, without requiring a nap).

This version looks good, Trapanese seems to be the style I’m thinking of. Also, if you think something might go well in there, try it, the whole idea is to celebrate what you have available.

Funny how many European cultures came up with similar ‘chopped mid-to-late summer veggies in a type of stew that can be eaten hot or cold’ dishes.
