I don’t think I’ve ever seen cast iron in a commercial kitchen, it’s just too bulky. Carbon steel is all over the god damn place though. The maintenance on that stuff if fairly minimal when it’s in constant use.

If you want to know how John Wayne felt right before he died. Decide you really need to perfect that technique and cook a steak that way twice a week.

That’s the bottle opener I grew up with! (Both parents were alcoholics, so I often was tasked with opening bottles.) It really did work well and feel solid.

Still recovering from making a whirlwind dinner. It was tapas style.

  • marinated cucumber salad (paper-thin cucumber, onion, radish slices with garlic, lemon juice, dill, olive oil, fresh rosemary)
  • sopressata, double-cream Brie, Gorgonzola crackers
  • smoky meatballs (1/2 ground beef, 1/2 ground pork with garlic, salt, pepper, one egg, homemade breadcrumbs, fresh rosemary; all smoked for 2 hours)
  • mushroom pastries (butter pastry dough [Chef John’s recipe] over smoked mushrooms, mild green olives, garlic, olive oil, processed into paste with a little feta cheese)
  • latke tarts (hash brown potatoes formed into cupcake forms, filled with egg mixture, goat cheese, pancetta, topped with a dollop of sour cream and chives)

Right tools for the right space.

I don’t know why it didnt dawn on me earlier , but the land im on is big enough to build a cheap wood fire oven. And I have a couple cords of fruitwood from the orchard, mostly Apple and plum. Japhroaigs pizza oven may ride again.

The last one I built I wasn’t thrilled with the oxygen flow. So I need to think about an alternate source of air. Buy hey , im quarantined, have a shovel, and time.

Back home we have Jenn-Aire from the 70s. Since Whirlpool bought them it has become harder to source parts, and the ones we get are not the quality of the ones they replace, so at some point we will have to find something new. I’m not looking forward to that.

Great to see you back and healthy. I also like the new fish.

For mom:

Grilled sous vide octopus with white beans and arugula salad.

She insisted I slice it cause she loves it but can’t look at it. I wanted a big groovy tentacle on the plate.

Linguine with white clam sauce.

There are several online appliance parts stores that have exploded diagrams for appliances so you can get the part numbers for parts like this. If they don’t have the part, you can use the part number to search ebay. I’ve had pretty good luck with this on our Jenn-Aires (which however are 10 years newer than your mom’s).

Thank you! I only got one of the mushroom pastries, because my 16-y.o. son had 10. I guess its fair - he made the dough, which was to Chef Johns butter pastry dough recipe. Still, I would have liked to really get a taste of them.

Is it really a chowder without potatoes? Whatever… it was delicious.

Food photography is its own specialty; it tasted much better than it looks.
