Shred meat and find street taco sized soft tortillas. With some diced scallions and hoisin sauce, you have poor man’s Peking duck.
Learned a new insanely easy recipe for use with bland fish (whiting, cod, tilapia, cheap salmon)
1: Saute a package of pearl onions or 4 onions cut in quarters in 3tbsp of butter
2. Add 1/2 cup of chicken stock
3. Add 10-16 oz of baby spinach or diced chard
3. Cover pan until greens are soft
4. Uncover pad add 1/2 cup of heavy cream
5. Add 2-5 tbsp vermouth
6. Add 4 fish filets and a squeeze of lemon juice (add salt and pepper for taste)
7. Cover pan and simmer until fish is steamed/poached
Serve over rice or pasta.
I ate at a restaurant today for the first time since this all started and had the most wonderful rissoto with sweet corn and parmesano. I am going to make a mission out of finding out the recipe and will share if I’m successful.

The greens release a lot of water in the cooking process. It comes out far thinner than you would expect.
