I’m not sure this counts even as a recipe, it’s so simple and everyone knows that things taste better when you’re camping, but these halibut sandwiches were a hit last night:
~1/3 lb per person halibut purchased on the dock from the people who caught it that morning
-olive oil
-Jacobsen sea salt
-freshly ground black pepper
-a light dusting of Old Bay
-thinly sliced shallots (optional)
Season fillets with salt, pepper, Old Bay. Saute halibut fillets in a pan until the opaqueness is 1/3 up from the pan surface, then flip. Add shallots. Cover for a few minutes. Check for white albumin to start to run from fillets, then remove from heat. Split hoagie rolls or brioche buns and spread on some dill-forward tartar sauce. Load a full halibut fillet in each hoagie roll. Eat.
I know I’ve posted similar pictures before, but I just love doing this. Why did it take me so long to figure out how easy this was?

On the hot side around here. So not cooking in the kitchen seems like a good idea.
Cold steak & mixed green salad with cumin and sumac vinaigrette / marinade. Also decided to toss some volunteer Golden Oyster mushrooms from the yard on the grill and serve with a nice slice of sourdough.
Grilled a bunch of marinated chicken thighs last night and cooked a meatloaf that had been pulled when I emptied and defrosted the freezer-I mean the heat was there, the meatloaf needed to be cooked, it would be tasty, so why not? Tonight I’ll boil some new potatoes and make a salad and they will go with the reheated meatloaf.
Simple snacks are the best. Smoked salmon, cucumber, tomato, chive cream cheese on seeded wheat bread.
