I’m no expert since I simply avoid red meat almost
completely, let alone processes meats, but this site and others say yes, there is more to bacon being carcinogenic than that:
Current research shows that there are certain chemicals in red and processed meats – both added and naturally occurring – that cause these foods to be carcinogenic. For example, when a chemical in red meat called haem is broken down in the gut, N-nitroso chemicals are formed and these have been found to damage the cells that line the bowel, which can lead to bowel cancer. These same chemicals also form when processed meat is digested. In addition [as I think you said], the nitrite and nitrate preservatives used to preserve processed meat produce these N-nitroso chemicals and can lead to bowel cancer.

My dad has just gone into palliative care and I’ve traveled back to look after my mum who is English. The first meal she made for me was liver and onions - I made the mashed potatoes.
I am a carnivore, and I actually prefer most vegetarian breakfast sausages to meat sausages-- the amount of grease in meat sausages is the big turn off, I end up feeling ill afterwards.
