I’ll stick with the smash with the flat of a knife method. This technique is a good way to stab yourself and will certainly cost you a corner of your Totin’ Chip.

For us it’s either smash the garlic or pay for therapy.

I find that slicing the clove in half usually makes the peel fall off. Then I can easily remove the germ.

I was at an embarrassingly advanced age, and too far into my cooking years, when I discovered that you can perfectly well smush garlic out of its papery shell with the heel of a hand. You don’t even have to bang on it, you can just cruuunnccccchh it quietly and gently on a countertop or cutting board. I’ve accidentally sliced myself with a chef’s knife enough times (not many but UGH) that the total absence of cutting edges appeals to me.

All that said, though, I’ll be looking into a bunch of these alternatives with interest.

I take the individual garlic cloves and give them a quick twist between my fingers. This usually loosens the husk enough I can pop it out easily. It works better on garlic that is not spanking fresh, but you rarely find that at a supermarket.
