Low-fat diets were a "global, uncontrolled experiment"

When I was in China, one of the health fads was to eat ‘like a westerner’. The theory went that Chinese meals usually involved continuously taking small portions from a selection of foods in the middle, whereas western meals were generally easier to judge on quantity and proportion as you had everything in front of you at once.
