Can I just recommend Tom Colicchio’s The Craft of Cooking instead? It literally taught me more about cooking than anything else I’ve ever done, and isn’t that worth $25 bucks?

There’s a ton of them available used on Amazon, starting at 1 cent (plus $3.99 shipping.) That’s where I got my copy. I second your recommendation. His Think Like a Chef is also excellent.
