the difference between “vanilla flavored extract” which is almost 100% a phenolic aldehyde called vanillan and the dark brown paste inside a whole dried vanilla bean is enormous. vanillan is a major component of the complex of flavors and aromas but there is a lot more to it than that.

There was a PBS show about vanilla recently that was amazing. As a child I always preferred vanilla to chocolate, but became a chocoholic I think because of societal pressure. As an adult I reacquainted myself with vanilla and realized I still preferred it.
