Super cool!
There is lumber that changes color when cut, too - it starts out one color, then oxidizes to another. Woods I’ve noticed doing this include American Black Walnut, Osage Orange, and Plum.

Yeah, this is one of my favorite cool mushroom tricks. A fair number of boletes display this rapid bluing reaction.
Running a fingernail along the gills of a Lactarius is another good one. And in some species the resulting liquid also changes color quickly!
