I notice this place sells “Large Pershings” and “Small Pershings.” Anyone know what those are and/or what city this bakery is in?

In Thunder Bay, Ontario they are fond of celebrating the Persian, a sort of cinnamon roll/doughnut-sans-hole covered in pink frosting, as a special local item. And there is some link with the name Pershing, per Wikipedia. So I am curious what history this thing has elsewhere.
