They’re known in the a/v and stagehand industry as safe lock or project-o-rama stands and have been around since before the fifties (if you couldn’t tell by the o-rama name)

A coworker has a fold-down laptop stand clamped on to the (rather sturdy) handle tubes of his rolling laptop case. It doesn’t even need any extra legs or support. It’s a custom job, but I’m sure similar commercial products must be available for those who don’t want to try making their own.
