In Australia and New Zealand the most favored fish in ‘fish & chips’ is flake which unfortunately most folk don’t understand is shark - eating “shark” is probably not so appetising. There is no legal requirement for any fish sold under the banner of ‘flake’ to name the actual species of fish so many endangered species are being over fished:
