Blimp Style Pancakes

Instant pancake mix looks…dubious…, at least to anyone from England, because the only dry ingredient is flour. I guess we eat different pancakes.

I can see how that would be confusing! The pancakes I’ve been eating/making since I was a kid start by sifting flour, baking powder, salt, and sugar until they’re well combined, then folding in the eggs, milk, and melted butter. The baking powder helps give them some fluff and airiness rather than crepe-style flat pancakes.

Agree. (Australian.) Pancake mix would seem to be a false convenience for the rest of the world. Value-adds like that are kind of tricky, since you get a lot less material by weight, and less control over what’s actually in your food.

I’ve seen it usually in those shake N mix bottles, which seem appealing, but are wasteful of packaging and anyway, they only make one batch. If it needs baking powder, buy self-raising flour in a 1kg paper sack. Adding sugar and salt doesn’t need measuring at all.

Some well known pancake mixes also add things like powdered buttermilk, chocolate chips, or use alternate flours and mix-ins for different types of pancakes. So while it’s a cinch to grab some self-rising flour and toss in some pinches of salt & sugar, it’s more cost-effective (and easier) to simply grab a box of mix than to also buy larger bags of the mix-ins or other additions.

They absolutely are wonderful. I also modified the recipe to make waffles.

Did you google it first? I would, but I’m hesitant to find out what act “Mexican Cheese Mattress” is a euphemism for…:smirk:
