Have you tried applesauce? We sometimes make a chocolate cake with the butter completely replaced by applesauce. The texture is slightly more chewy, but the apple flavour adds a nice balance to the chocolate.

Made the best Thai curry sauce last night.

Typically, I do the whole thing in one big pot. This time, I did the sauce separately.

Grind in a small food processor until nearly smooth:

  • soft part of two stalks of lemongrass
  • a few cloves of garlic
  • a couple inches of ginger
  • a couple tablespoons of panang or other curry flavoring paste
  • a couple good splashes of fish sauce
  • a couple good splashes of soy sauce
  • some cilantro
  • some parsley
  • zest and juice of a lime
  • use olive oil to loosen it up enough to grind it to a fine mash
  • Then:
    Saute onion in lightly toasted sesame oil until soft
    Put in fat part of a can of GOOD coconut milk, not cheap crap. Use the good stuff from your local Asian market. Spend two buck on it. It’s a can of shit, for krisesakes. So spend two bucks.
    After the stuff starts to simmer, put in all the paste mix you just made & the rest of the coconut milk.
    Simmer it a while, on low, to cook it up good like.

    I served it on white rice and oven-crisped tiny eggplant slices. Just eggplant slices with olive oil, roasted in one layer in a pan until brownish and crispy edged. I also sauteed some of those long green beans you can only find at Asian supermarkets. Oh, and I roasted a chicken. Yes, curries can be reallllllly yummy when all the stuff has melded together in the pot. But this one served as layers was really good, too. Think about it!

    Thanks for this, I just tried this out - my wife and son ate early, so I figured it was a great low risk time to try something new.

    I made a half recipe just for myself and it was stupidly easy. The rest of the family tried a few bites, I ate the rest myself with just black beans and cheese. I’ll be making these again very soon.

    So glad it turned out well! :smile: It is the type of thing that once you do it a few times you’ll forget why you ever didn’t do it. Just about anything can go into a wrap or taco.

    Made some micro quiche, kind of nonvolunteeringly, I was on the list for Christmas food makers. (primary school). I love to make things, so no problem there. Only something else.

    But there is a story, past year I made them also. And found a crying 4 year old: “Juf (kindergarten teacher) eat one, liked it, but nobody else touched them, but still she threw them away. Nobody even touched them”. Poor kid, indeed, not throwing good food away is a thing we try to pass. Time cures.

    But noo, this year I’m again listed to make a ‘groententaart’ (quiche with vegetables), pff…

    I managed to make something nice, even tried to put some love in it, do you know how difficult that is after past story? :wink: A bit ‘light’, but on purpose, tomorrow morning I will give them a short while in the oven.

    But please help! How can I make these things inviting to 5 year olds? (Ingredients… a bit bacon, onion, courgette, red paprika, egg and a bit cheese).

    Do you have any toothpicks? you could attach stickers to the toothpicks like flags and put one in each mini quiche.

    Thanks, also a thing to do. Will let you know what it will be.
    But why do they (the other kids) need extra fancy to eat something completely normal? And why do I really want to avoid an other disappointment? He knows people ask his mom to cook, but I know that the kids in class are really important to him.

    Or just ask @Missy_Pants for a Butter Tarts recipe as what elementary school kid is gonna say no to sugar and syrup in a tart shell?

    For a class holiday party, it may be hard for delicious savory foods to compete with all the desserts likely to be on hand. Children find it hard to resist the rare chance to eat dessert before, or instead of, their regular meal.

    I like the idea of making faces on them, that may add the extra appeal needed to give them a try.
