Which center? There are the two people who jack the car up; front center and rear center. Then there are two people on the sides; right center and left center. I think they stabilize the car from tipping, since the front and rear center jack points allow to car to roll to the side if no one supports it.

They stopped refuelling cars at pit stops partly to stop things like this from happening:
(Nobody was injured- in fact the driver of the car that catches fire in this video came 4th on Sunday).

That has actually happened, drivers have left the pits with a retaining nut either left off
Probably safer than driving away with the fuel hose still stuck in the car,
