Inspired, I found a recipe and made Cauliflower Risotto last night. Everyone loved it. It was probably more of a Cauliflower Alfredo, to be fair. But very tasty. Thanks for this.

Most of the vegan donut recipes I see have a lot of specialty ingredients, so I keep hoping for one that isn’t too extreme but still tastes good enough that one batch would satisfy everyone, not just the one vegan in our family, you know?
This is the recipe I used:
Baked Vegan Apple Cider Donuts. I had coconut oil on hand, for the sugaring step she uses coconut oil or melted vegan margarine. The other item I didn’t have on hand was pastry flour, but I had cake flour which I cut 50/50 with all purpose. She gives a substitution of using flour with a small amount of corn starch.
The eyes were marshmallows cut in half and dotted with a food marker.
They were baked, not fried, so didn’t have the hard crunch some fried donuts do, but they had some crispy cakiness to it.

They were respectable donuts, and if I had not known that they were vegan, would not have guessed.

So you know, Trader Joe’s often sells the mini marshmallows, and theirs are ‘accidentally vegan’, unlike most brands.

Fun fact: because they only produce Tootsie Rolls in their factory (near Midway Airport on Chicago’s southwest side), they’re safe for virtually any allergy or dietary restriction. (No cross contamination, ever.) They’re not vegan, however.
It’s a good choice to put in the teal pumpkin for the kids who can’t eat most candies.
Teal Pumpkin?
People have begun putting out a teal colored pumpkin as a sign that they have alternatives to candy for tricker or treaters who can’t have it, or who need allergy friendly goodies.

We used to just use two very different baskets, to make it clear there was no co-mingling, rather than buy or paint a pumpkin bucket for the protected candy.
I miss those days, but getting 400+ kids over a 4-hour period was also very stressful.
Is that the family platter size?
