I was intrigued by the experiment, but frustrated by the lack of planning. Someone should have anticipated the troubles with helium, and found a way to compensate. Based on the fried coffee run, I was curious about using a gas with much higher thermal conductivity, and I feel like the results would have been much different if the roaster used mechanical agitation rather than relying on gas movement. Or maybe the effect of oxygen on roasting is minimal; the nitrogen sample certainly seems to imply as much. Interesting video nonetheless.
