IIRC the Declaration of Independence is written in pokeberry ink. TONS of it around me (GA).

A five gallon bucket of American black walnuts left outdoors for a month or two generates ink pretty well without any human intervention; you could just strain out the worms and use it. It’s about the same amount of effort as harvesting poke berries - but without that whole fatal neurotoxin issue.
Making ink from carbon or oak gall is quite difficult by comparison.
