Eclairs are very triggering for me. When I worked at a culinary school, the students would dump their extra eclairs–they had to make sheets of them at a time–on my desk. I think they were trying to kill me.
I’d never even heard of a coffee eclair and now I need one!
I tried to make what I consider “regular” eclairs a few years ago (plain custard filling, chocolate glaze). The tubes all collapsed after I took them out of the oven and I haven’t tried since.
The shots of the bakery cases so made me want to move there.
