that chef made it look so easy. very enjoyable to watch someone doing something at expert-level. i wish i could have one of those right now.

Eclairs are very triggering for me. When I worked at a culinary school, the students would dump their extra eclairs–they had to make sheets of them at a time–on my desk. I think they were trying to kill me.

I’d never even heard of a coffee eclair and now I need one!
I tried to make what I consider “regular” eclairs a few years ago (plain custard filling, chocolate glaze). The tubes all collapsed after I took them out of the oven and I haven’t tried since.

The shots of the bakery cases so made me want to move there.

If God had wanted us to eat coffee eclairs, he would have made them taste better. This is an affront to both coffee and eclairs, and if you disagree … well, you’re probably a communist or something. :wink:
