Is that an ancient pizza depicted in this 2,000-year-old painting?

It’s a pizza without tomato sauce. There are all sorts, I personally love the one my local trattoria makes, the Pizza Cacciatore, with flecks of béchamel, chanterelles, and wild boar salami. Instead of mozzarella it uses pecorino cheese.

But basically, any pizza without tomato sauce is a “white” pizza.

The pizza that was sold originally as street food in Napoli did not have tomato, probably only oil and cheese.

Most of untouchable, ancient, canonical Italian traditions are, in fact either:

  • Very recent, or
  • Very imaginary

Shall we talk about Carbonara? Or onions in (A)matriciana?

I think that’s nonsense, but if true it would actually support the “fruit is appropriate on pizza” position.

Pineapples do start out small. Maybe they preferred theirs extra tart!
