Does anyone know of similar models with open source designs? Would love to cut some out on a laser cutter.

Not exactly, but check out http://flitetest.com for free model aircraft designs built using a similar method.
I can never get gouache to come out as superflat as I’d like, especially on large scales. What am I doing wrong?
