You lost me at ammonia and plastic bags—just can’t get past the smell and the image.
Actually, having acetic acid fumes nearby (warm up a pan of vinegar) nearby will neutralize the ammonia’s odour and effect.

Washing soda is the bestest most inexpensive grease-remover I’ve ever found. A box is like $5 and will last ages. Hot water and that will even do that gross film on the top of kitchen cabinets. Plus it’s environmentally-friendly, so yayz.
This works great on BBQ Grills. That hadn’t been cleaned. In three years.
