There’s already lots of canon content for thousands of years before the Clone Wars and Skywalker stuff, it’s called “The Old Republic” and there’s a number of major conflicts and works of media set in that period. Meanwhile, if they tune the dial to just after “The Old Republic” and just before “The Skywalker Saga” there’s a chunk of not completely uncharted territory, but at least territory less fleshed out.
