It still blows my mind that the original version was, quite literally, a continuous loop of film that was run through an elaborate film cabinet mounted to the rear of the simulator and fed to a projector mounted under the nose. Hats off to the Imagineers who figured out how to make that Rube Goldberg device work (reasonably) reliability for decades without shaking itself apart.
This is my very favorite ride, from the day it opened. I’ll make whoever I’m with ride it at least twice.

(Whispers) It’s just Conky 2000 without the stutter.
I made a point of taking the ride on my last visit, even though most of the Star Wars action has moved away from Tomorrowland. It still holds up.
My daughter wants to ride Star Tours as often as she can get away with in a day. I believe she has seen all the random segments, but she is always looking for something new. I finally got back to Epcot Center a few years for the first time in decades and made my way to Star Tours as soon as the park opened. I rode it a good five times before the lines started getting long. The new, varied experiences were nice, but the original is still my favorite.
Star Tours was installed in the building that had previously held Adventure Through Innerspace. If you look in the lower right corner of the frame starting at about 0:54 in this video, you can see the Mighty Microscope that was featured in the older attraction.
