Tangent; I developed a super easy tikka masala recipe to give myself more options for leftover chicken after roasting a bird. Basically all you need to do is skip the marinade part in this recipe from Food & Wine Magazine, but add about half of the amount of those dry spices to the pot. Simmer all that together and then add leftover chicken. Continue to simmer a bit for the flavors to meld. Serve over rice. Garnish with a couple of tbs of yogurt. Note: I also skip the almonds because I don’t like the texture. The whole recipe using leftover chicken takes about 30-45 minutes to prepare. I had this for dinner last night.
