Wouldn’t N2O be nitrous oxide? Dipping a banana in a container of liquid N2O would probably be a lot of fun too, but more because of the vapour it would develop…
Though apparently the boiling point of N2O is -127 C, compared to -320 C for N2 - so it might also achieve the goal of deep-freezing the banana, though you might forget the point of the experiment, and find yourself just looking at it.
