Having never before had kimchee and having now what I can only imagine is a powerful hunger for the stuff, what would you recommend as being the fastest and safest way to make kimchee of sufficient quality be in me?

It’s pretty awesome.
It’s the sort of peasant food that’s invented when all you’ve got is some rock-hard cheese, some garlic and whatever herbs grow nearby. It’s rough and powerful and fools your gut into thinking it’s had a proper meal when all you’ve had is a bit of garlic cheese paste on bread.

Total throwback cuisine from a proper source with historical interest, links to the modern world and still tastes great, if a little eye-watering from all the raw garlic. One of my favourite picnic and BBQ foods, not least because it’s really easy to make.

Fastest? Local Korean restaurant (they will be picky and good)

Home made? I use a variation of this. No shrimp, usually oyster sauce. Takes about a week,.but you may nomnom.the jar before.

The text on the books is mostly illegible/out-of-focus, and there is an obstruction in front of many of them.

I don’t know what the problem is. Lately when I take pictures there’s this weird cat shape in all my pictures. I think it must be the lens.

So I haven’t pulverized it yet, but two hard cheeses, sage, a truffle, garlic, and olive oil sound right?

Looks good to me. I use a lot more herbs in mine, but I don’t truffle and you might swamp the taste of that.
Might need a splash of wine vinegar in there, too.

Ooh, good idea. I’ll also grab a few more herbs from the garden.

For the bread–plain or toast?

Good on both, but toast gives you an ur-pizza sorta vibe.
