If I’m playing with my dog, and she accidentally nips me instead of her toy, the second her teeth hit skin she backs off and has that same guilty look.

I was thinking that same thing.
This was a cat being a cat and a dog being a dog. Cat hunts anything running/flying horizontally with claws, dogs pounce on approaching food/prey with jaws. Both instinct.
