Oh yeah, they eat it, but it needs to be in small enough pieces to pick up with their trunks and fit in their mouths, which requires quite a bit of stomping, apparently.

Except for the sawn off tusks and being captured in a zoo or the like.
I’m sure that it probably doesn’t actually cause any pain to an elephant to be de-tusked but maybe it’s not the best practice when dealing with an elephant.
Smash all the pumpkins and enjoy the spice I guess.
