I don’t think those foundations have a direct connection with the olive oil industry-- unless my estimation of Texas climate is misguided. They appear to be rich christians-- take from that what you will.

If one accepts that anti-inflammatory diet has [human or mammalian] brain health benefits…

… then it is reasonable to consider consumption of EVOO as a potential benefit:

Yes, I would like to see some population studies of Alzheimer incidence in regions with heavy olive oil consumption (say Greece) vs those without (say India).

Or, as the case may, the accumulation of tau proteins that are a side-effect of AD. Tau proteins per se are not toxic.

Ok, whether it helps with alzheimers or not is still an open question, but it does seem to be good for you anyway.

But now I’m wondering, is that also true when you cook with it? Or only when you like, dip bread in it or eat it on salads?

I hear you. I’m not in favor of soiling the Earth just for our benefit. We must remain ethical. Are transgenic mice, i.e. mice destined for physiological deformity ethical or unethical? I could be convinced they are either. What about transgenic cockroaches? Now I don’t know where the line is.

claims that EVOO has a lower smoke point than other oils-- including other grades of olive oil.

But the exact numbers are disputed.

There’s a reason people go through the hassle of clarifying butter. I’ve tried… and failed. Maybe a “candy” thermometer would help.
