Got a container full of fava i depodded this weekend, going to try and make some egyptian style falafel today or tomorrow.

I’d never known about that version, thanks for the tip! Have you ever tried baking it instead of frying? I can’t imagine frying anything during our current heat wave, but now I have a hankering for some falafel…I found a “baked falafel” recipe, but it’s not a source I’ve used before, so not sure how reliable it is.

It would be interesting and probably worth trying, though I am not sure if you’d get that lovely oil soaked caramelized crispy coating without frying…

We’ve started baking other stuff that’s traditionally fried, like eggplant for parmigiana alla melanzana, it’s still good, but no patch on fried, you do feel a bit more virtuous after eating a second helping though :slight_smile:

I’ve been grilling eggplant for eggplant Parmesan the last few years (instead of breading and frying or baking) and that’s delicious.
A few weeks ago we made saag paneer and baked the paneer instead of frying and that stuff came out even better than when frying, since our homemade stuff tends to fall apart in the frying pan but stayed delightfully cube shaped and crisped right up in the oven.
If I try the falafel I’ll report back.

Please do, our biggest complaint about frying is that the exhaust fan in our kitchen is crap, and everything smells like oil after we fry, so if they work out well, I might try that!

Probably more suited to the crafting thread, but since you mentioned exhaust fans, we couldn’t find any pre-made ones we liked for a kitchen island, so Mr.Linkey made this beauty for us:

The fan motor is up in the attic so it’s relatively quiet, but powerful. And the LED light strip can do the whole visible spectrum and be programmed to vary on a timer, so also useful for dance parties.

I have not used it for this, but I swear by my single-use* tofu press, and I’ll bet it would be very helpful to get the wetness (causing the structural issues) out of paneer as well.

  • BB frowns on such implements, but everyone has their own specific needs in the kitchen.

Since I’ve started treating tofu like paneer I’ve had a much better experience cooking with it.

I use a cast iron skillet and a pot of water to press my paneer, and now tofu.

ETA
And no shame on the single use item. I saw a listicle of ridiculous single use items recently and half of them were essential. I think it had a coffee grinder in it FFS!

How many times has the weight on top been balanced precariously and you worry it’s going to fall off? (With a pot of water, that would be particularly bad!)

Once you use an actual tofu press, you will never go back.
