yummy! do tell more about your mole! so many things go into a proper mole, it is truly a culinary delight.
my father lives in Oaxaca, the land of mole, mezcal, mountains and mushrooms - but don’t tell papi about that last one, he’ll start to wonder again where i was that weekend. not sure i know, really (was it the mushroom? the mezcal? ¿o, los dos? dificil de decir…)
but anyways, the rich tamales enmolada (chicken tamales in mole) were incredible. can’t wait to get back to visit papi!

I made this:

Wow! It was fantastic as tacos with the tomatillo salsa (linked to on the recipe page) and we ended up freezing a couple of taco filling meal’s worth. Five types of dried chilies (the observant will count four in the recipe - I added a couple of chili de árbol for a bit more heat) and about three hours in the oven. This is going on the “never forget” list.

Some questions: lamb shoulder or leg (bone in) are pretty impossible to cut to small pieces, and Rob isn’t really a stewing meat is it?

And why take the seeds out of the chillies and then add some de àrbol for heat? Couldn’t you just leave the seeds in?

Looks delicious, I can smell the recipe like the abuelita rancho cooking channel linked here the other week.

@FloridaManJefe - I know this is north of you, but wondering if you know, after the Burmese Python hunts, are there any big cookouts or do they sell the meat at all?
Just saw this in the local paper, and it seems the hunters are getting more than in previous years…had me wondering.

This year’s winner got almost 30! Over 200 in total. That seems like a lot of meat.

According to the website for the hunt, python meat is high in mercury and is not certified as safe to eat.

Some Burmese pythons removed from the Everglades that have been tested for mercury levels had high amounts of mercury for human consumption. Though it is not illegal to eat python meat, the FWC cautions that neither the Florida Department of Health nor the Florida Department of Agriculture and Consumer Services have stated that python meat is safe to consume.

i was just about to say what @anon33932455 wrote. yup, high levels of toxins in that meat. the skins make great boots, tho!
i just saw a story in a Key West newspaper (sorry - link won’t post here, paywalled) that stated there are estimated to be over one million pythons in the 'glades. and that there were few-to-none before hurricane Andrew wiped out Homestead in 1992 (coincidentally, the same event that may have released lionfish into the environment - but lionfish are edible and delicious!)

actually, the two pair of python boots i have worn were the most comfortable boots ever! it was as if they were already broken in on the first wearing.
the red python boots from Nocona were sexy AF!

I have seen snakeskin boots and I also thought they were the coolest thing ever.

You just couldn’t really wear them round here.
