I assume the “Wash Hands” signs in the employees’ rest rooms have been removed.

I assume the “Wash Hands” signs in the employees’ rest rooms have been removed replaced with “Dip Hands in this Vat” signs.

Can also be expanded to restrooms for public use.

This is disgusting, but a lot of the breweries releasing sour ales and the like aren’t much better. There’s a deep and widespread misconception that endogenous microorganisms = filth.
