I think sometimes sugar and flour production isn’t vegan. I’ll leave it to actual vegans to explain why because I can’t remember.

I’m still stuck on ‘vegan cake mix…’ how does that even work, if you can’t use milk and eggs in the batter?
Does the cake mix have something to accommodate the inability to add eggs and milk ? i.e. Is it a vegan cake mix not because the mix is vegan but rather because the mix can be made into a cake in a vegan manner?
I guess I just can’t wrap my head around the concept of ‘vegan cake’, because it seems like an oxymoron.

The animal products are a necessity for the recipe to work as intended… just like cake.
Sugar is sometimes processed using bone. Flour may have similar issues in the processing or additives.
And then there’s that.
All the stuff that makes a cake actually taste good is the stuff that vegans don’t eat.
It does sound like something that would be called a cake but would have the texture of a dry hockey puck.
On the other hand the gluten free baked goods have not improved in texture and quality as people put effort into testing things. Maybe through the miracle of science a vegan cake can exist.
