if your brisket is worth a damn I’ve found that the best knife to use is a bread knife. learned this from taking multiple brisket tours of texas.
Pretty sure he’s talking about trimming it before BBQing, i.e. trimming the fat and other stuff off

Correct, Sir. So is other guy, good bread knife for serving is well advised.
OK, I’ll open the can of worms.
I’ve found a super sharp cooks knife will out perform a bread knife even on bread… not so much on soft pastries like croissants. I’d be concerned about the serrations pulling and tearing the meat.
I did say super sharp!
